Bannock Bread

The original bannocks were heavy, flat cakes of unleavened barley or oatmeal dough formed into a round or oval shape, then cooked on a griddle. “Bannock” is a Northern English and Scottish word of Celtic origin. If you have spent a lot of time out in the woods you have eaten your fair share of Bannock, the Indians would wrap it around a stick and cook it over an open fire. Today’s native Fried Bread is like bannock and cooked in a skillet. Toutons are similar bits of dough deep fried.
